This great smoothie packs a powerful nutritional punch into your day. It is full of fruit, yogurt, chia seeds and, of course, spinach! I called it Popeye's Spinach smoothie because it has a large amount of spinach and that was always Popeye's favorite thing to eat. It was how he got so strong in the cartoons. In real life, spinach does have some pretty sweet health benefits. And smoothies are perfect for getting in your spinach because they hardly affect the taste at all. It is a win win!
Popeye's Spinach Smoothie
Makes about 2 servings.
Ingredients: 1 vanilla yogurt cup (6 oz. or about 2/3 cup) 1/2 cup pineapple juice 1 medium banana 1/2 cup fresh pineapple 1 to 2 tablespoons soaked chia seeds (optional) 2 cups spinach (make sure you pack it tightly into the measuring cup) 1 cup frozen red grapes 1 to 2 cups ice
1. If using the chia seeds, soak them in 3-4 tablespoons water for a few minutes.
2. Add all of the ingredients in the order they are listed into the blender and mix on high until smooth. You may need to adjust the amount of ice to your preferences.
