The piña colada is the ultimate fun-in-the-sun, vacation on the beach, tropical island in the middle of nowhere drink, sitting in a hammock under the palm trees. So, that might be a bit overextended. But these definitely are the epitome of a tropical drink. And they are so, so tasty. Warning: This amazing recipe may cause you to crave Piña Coladas for the rest of your life.
Piña Colada
Makes about 4 servings.
Ingredients:
20 oz. can of pineapple tidbits in 100% juice (or 2/3 cup
pineapple juice and 2 cups pineapple)
1/2 cup cream of coconut
4 cups ice
1. Blend the pineapple with juice and cream of coconut until mostly smooth.
2. Add the ice to the blender and blend until no chunks remain. It is best to use crushed ice rather than large cubes.
For dressing this one up, you can get an actual coconut, cut it in half and remove most of the flesh. Now use them as cups for the drink.
