A few years ago, honeydew became my all time favorite fruit. I hadn’t really had them that much before. Then I got some in the summer when they are perfectly in season. Wow. I was blown away. Ever since then, I have loved them, but only if they are actually ripe. So it naturally followed that I wanted to make a smoothie featuring the honeydew. It has been difficult. The honeydew flavor is rather delicate and can easily be overpowered. In the end I paired it with vanilla yogurt and spinach for the final recipe. This one is more of a light drink, with little ice or thickness to it. It would be a perfect refreshing (and healthy) drink for a hot summer day.
Honeydew High
Makes about 2 servings.
Ingredients:
2 cups cubed honeydew (try to get some of its juice in there too)
1 vanilla yogurt cup (6 oz. or about 2/3 cup)
1 cup spinach (remember to pack the spinach into the measuring cup)
1 cup ice
1. Simply add the ingredients in the order listed into a blender and turn it on.
2. Pour and enjoy.
